Why does salt separated from a saltwater solution look different than the salt that dissolved in the water?

The formation of crystals will be vary on the surface on which they form at least in a fashion

When salt is dissolved in water, it breaks apart into its component ions due to the polar nature of water molecules. The separated salt from the solution may look different due to conditions during the crystallization process, however, it remains chemically the same as the original salt. ;

Salt looks different after being dissolved and then re-crystallized mainly due to dissociation in water and the subsequent conditions during crystallization. Although the chemical composition of the salt remains the same, factors such as evaporation rate and temperature can influence the shape and size of the crystals formed. Thus, the differences observed are based on physical characteristics, not chemical properties.
